Honeywell Semolina Crepes: A Breakfast Twist You’ll Love

Instructions

Instructions

1. Create the Base In a large mixing bowl, combine your dry and wet ingredients. Whisk together the Honeywell Semolina, egg, sugar, evaporated milk, salt, melted butter, and nutmeg. Whisk vigorously until the mixture is completely smooth and lump-free.

2. Adjust the Consistency Gradually pour in the water and the banana essence while continuing to whisk. You are looking for a batter that is thin enough to swirl easily in a pan, but thick enough to hold its shape.

3. Heat the Pan Lightly oil a non-stick frying pan and place it over medium heat. Allow it to get hot (but not smoking).

4. Pour and Swirl Pour about ¼ cup of batter into the center of the pan. Immediately tilt the pan in a circular motion to spread the batter thinly and evenly across the surface.

5. Cook to Perfection Let it cook for about 1 minute. You’ll know it’s ready to flip when the edges start to lift slightly and the underside turns a beautiful golden brown.

6. Flip and Finish Gently flip the crepe with a spatula. Cook the other side for just 20–30 seconds to set it.

7. Stack and Serve Transfer your warm crepe to a plate. Repeat the process with the remaining batter, adding a tiny drop of oil to the pan between crepes if necessary.

Chef Tips

These crepes pair wonderfully with a drizzle of honey, chocolate syrup, or even a side of spicy scrambled eggs for a "sweet meets savory" Nigerian twist! Storage: If you have leftover batter, store it in the fridge for up to 24 hours. Just give it a good whisk before using it again.
